Terroir & Variety
Tămâioasă Românească — affectionately called “Timmy” by winemaker Stephen Donnelly — is one of Romania’s most ancient and treasured grape varieties, said to have been introduced by traders from Ancient Greece. For this cuvée, grapes were sourced exclusively from 69-year-old vines planted at 170 meters altitude. Their deep root systems draw rich minerals from the soil, while the three-meter spacing between rows provides optimal growing conditions for concentrated fruit quality.
Winemaking
Hand-harvested in the cool of early morning, the grapes underwent ultrasonic maceration to extract maximum aroma and quality. The must was cold-soaked on the skins for 48 hours, then fermented for 25 days at just 10°C with selected yeasts to preserve freshness and aromatic intensity. Vinified entirely in stainless steel, with no oak influence, the wine reflects the true, unmasked character of the Tămâioasă Românească grape.
Food Pairing
Perfect on its own, it also pairs beautifully with chicken, seafood, creamy cheeses (including blue cheese), or lightly spiced Asian dishes.
