Panciu Riserva Frizzante Unfiltered is the first Romanian petiant white wine fermented in the bottle, without disgorging, without sulphites.
Several innovative technological processes were used to complete exclusion of sulfur dioxide from the vinification process. The process ensures the permanent protection of the raw material in an inert gas atmosphere. The fermentation of the juice with selected yeasts that consume large quantities of oxygen in the metabolic processes and the controlled malo-lactic fermentation of the wine are the main principles underlying these processes. The wine obtained contains an insignificant amount of sulfur dioxide (<10 mg / l), naturally occurring especially during alcoholic fermentation. Carbon dioxide during secondary fermentation in bottle, in addition to the organoleptic role, has an antioxidant protection role. This way the product can be kept even for 2 years without danger of oxidation. All this time due to the contact with the yeasts, the wine will become more complex in flavor and taste.
Panciu Riserva Frizzante Unfiltered is a dry white, sparkling white wine with fruity notes, especially of apricots and green apples with fine fresh pastry notes due to the preservation of yeast. The taste is balanced, with medium acidity and notes of peach and “cozonac” (a Romanian cake – sweet bread).
It goes well with carp fish, stokvisch, grilled walleye fish, pasta with seafood or white sauce.
