Due to its strong and very expressive character, Merlot Bauer suits a more consistent culinary partner – beef, game or similar dishes. We also encourage you to experiment and enjoy the Merlot Bauer combination – dessert based on chocolate and/or coffee (Chocolate Mousse or Lava Cake).

The grapes for Bauer wines are always picked by hand and selected, grape by grape, through repeated harvests. After destemming, the grapes are not crushed and selected yeasts are not added. Alcoholic fermentation takes place in small stainless steel tanks, without controlled temperature, “pigeage” being done manually up to 3 times a day. The wines remain for up to 5 weeks on the lees, before pressing and aging in large oak barrels. Malolactic fermentation is initiated in the barrels, the wine then remains in the barrel for a minimum of 14 months until bottling.
