Jelna – Pinot Noir Wild Yeast develops fresh notes of cherries and sour cherries, as well as decadent notes of geranium, nettle wood and caramelized beef. The taste conquers with its elegance and delicacy, having a velvety, soft and tender texture.

Winemaking:
70% of the grapes were gently de-stemmed as soon as they reached the optimal temperature, then carefully sorted using a vibrating table. Being slightly crushed, the grapes followed their natural course to 2 stainless steel containers with floating lids, each of 16.7 hl, where they were left for cryomaceration for 3 days. Fermentation took place for 14 days at a temperature of 16-28 degrees Celsius, with 2 Piceages in the morning and one in the evening, daily.

80% In stainless tank, on fine yeasts for 6 months
20% 16 months in new Transylvanian barrique, 2018 harvest
