Produced by selective harvesting of the most valuable parcels, with a vine average age of 37-40 years. The three varieties that make up the blend are processed separately. The grapes have been selected on a fixed sorting table and have been processed through a spared flux. A classic winemaking method has been used, on marc, in small stainless steel tanks, at 26-28 oC. Cabernet Sauvignon – 30 days, Merlot – 22 days, Fetească neagră – 20 days. The malolactic fermentation in barriques has been completed immediately after the alcoholic one. Quantitatively, 85% aged in Romanian oak barrels (225 litres) for 9-10 months, 15% in stainless steel vessels. Bottle aging for a minimum of 24 months.

When we begin working on the soils that feed our vines we intentionally employ traditional methods, even if we use state of the art technology, with ever increasing efficiency.We prefer to work harder, several time a year, by ploughing rather than using herbicides to control weeds in our vineyards. Moreover, ploughing aids in aerating the soil, which favors microbiological development – an important factor in natural equilibrium of each plot. Ploughing also limits water evaporation, crucial during prolonged droughts.

Difficult and poor soils like the ones in our vineyard have the reputation of being ideal for a qualitative production. However, it is necessary to avoid instances when soil nutrients reach critically low levels so as not to excessively weaken our vines. This is why we use natural fertilizer, manure, which adds enough nutrients to our soils, while also aiding with water retention.

The locals live through their vineyards. They are hardworking men and women, patient and very passionate about wine. It is with these skilled and kind people, that Davino begins year after year its pursuit of perfection.
