The wine mad from the Fetească Neagră variety, and it is an homage to Count Guy de POIX. He was the founder of S.E.R.V.E. winery, moved to Romania and has dedicated his last years to the rediscovery of great Romanian wines.

The alcoholic fermentation was made in concrete containers and lasted about 16 days. The secondary malolactic fermentation was made in 225 liters barrels of French and Romanian wood of 1, 2 and 3 years. After a maturation of 8 to 12 months in the barrels, the most valuable wines were selected to take part in Cuvee Guy de POIX. The initial blending was made barrel by barrel, in small lots, leading to the final blending. The conditioning and bottling were made with a very light filtration, not to assault this great wine.

The wine presents a strong, intense purple red with garnet reflections. Immediately you will feel the complexity of this wine, the special wine-making style succeeded to took out the best aromas and texture from Fetească Neagră grape. Plums, blackberries, rosehips, balsamic notes and chocolate aromas are completed by a princely structure, an astonishing defined body plus velvety tannins.

Kept in optimal conditions of temperature, light and humidity, this wine has an ageing potential of at least 12 years.

In the first years of our activity (1995-2001) we worked in an existing winery and in 2001 we finalized the new facility on a site close to our vines. The construction started in 2000 and we did our first bottling in 2001 (our first harvest was processed in 2002).

Our winery is very efficient, a perfect blend between modern and traditional equipment and techniques.
Along the years, we’ve gradually enhanced our capacity, always adapting to modern winemaking techniques.
Thus, in 2005 we increased our white grapes processing capacity to 2700hl in stainless steel. In 2007 we increased our controlled temperature storage capacity (a separate building with a storage capacity of 2000hl in stainless steel tanks) and built a dedicated space for wine aging in oak barrels that can fit 1000hl.

The terroir is the starting point for every good wine. It represents all the factors that influence the taste and quality of the wine and it also includes the human factor. Therefore, when choosing the locations for our vineyards, the main factor was finding locations that offered the best geographical features for the development of various types of grapes.

In Dealu Mare region, “The Land of the Red Wines”, recognized as the best area for the development of red grape varieties in Romania, we own 60 ha of vineyards. Red varieties such as Cabernet Sauvignon, Fetească Neagră, Pinot Noir, Merlot, but also whites, such as Chardonnay and Fetească Albă, come to life here and express their “personalities” year after year, either in blends created with great care or as monovarietal wines.
The hills of Dobrogea are renowned for the characteristics of the terroir which help produce some of the best Romanian white wines. This is why we chose Babadag vineyard (Cogealac) to cultivate 56 hectares with mostly white varieties.

Most of our vines were planted from 1999 until 2012, with plants from our own nursery. We also harvest an older plantation (established in 1965), which was discovered and restored with great efforts.
