Novac is a recent grape variety obtained from two ancient grapes: Negru Vârtos or Stout Black – Romanian forgotten grape and Saperavi. The recipe is similar to Negru de Drăgășani but the Novac has a stronger character. Novac was born due to the desire of the Romanian wine specialists to create a Romanian grape varieties to define the Romanian culture and style together with the ancient Fetească grapes varieties.
The variety in planted in a small area in Drăgășani, south of Romania, and has a important potential to give high quality wines suitable to be aged in oak barrels to increase the complexity.
The grapes have when they reached full maturity around 200 – 220 grams of sugar/ liter nd the total acidity (H2SO4) reaches 5.2 to 6.3 g/l.
The typicality of this variety is the dark ruby color of the wine and aromas of cranberries, raspberry, soured cherry, cloves, dark chocolate, juniper, black pepper and other spices.
The wine is full-bodied with fine tannins and good acidity, it is highly suitable for aging in oak barrels and then bottles.
